Crockpot Korean Beef Sliders with Cucumber Slaw

2 pounds short ribs
1/2 bottle (5 ounces) low sodium soy sauce
1/2 cup packed brown sugar
3 cloves minced garlic
2 Tablespoons grated ginger
3 Tablespoons rice vinegar
1 Tablespoon sesame oil
1 Tablespoon vegetable or olive oil
1 1/2 Tablespoons sriracha
1 cup water
1 small cucumber
1/2 tsp salt
crushed red pepper to taste

Instruktioner
to make Beef:
Spray slow cooker with non-stick spray and add ribs.
Mix together soy sauce, vinegar, garlic, ginger, sriracha, all oils, and water. Also mix in brown sugar.
Pour mixture over ribs in crockpot.
(! ask about this!) Cook on low for 3 to 4 hours or on high for 7 to 8 hours
Remove 1 1/2 cups of cooking liquid and bring to boil in small sauce pan.
Reduce heat and simmer until liquid is reduced by half.
Shred meat, taking out bone and discarding.
Add shredded meat to reduced sauce.
to make Cucumber Slaw:
Slice cucumber very thinly and sprinkle with salt.
Let sit in fridge for 1 hour.
Drain any water and pat dry.
Add 1 1/2 Tablespoons of rice vinegar and pepper flakes to taste.
Mix together and chill until served.
to Assemble:
Place shredded meat on bottom half of sliced bun.
Place 5 to 6 cucumbers on top of shredded meat and sauce mixture.
Top with top bun and enjoy!
