2 large boneless, skinless chicken breasts

½ cup cottage cheese

¼ cup fresh spinach, chopped

½ cup artichoke hearts, drained and chopped

2 cloves garlic, minced

¼ cup grated Parmesan cheese

¼ cup olive oil

Preheat Oven and Prepare Chicken:

Preheat your oven to 400°F (200°C).

Cut the chicken breasts into 1-inch pieces and place them in a mixing bowl.

Prepare the Spinach Artichoke Mixture:

In a separate bowl, combine the cottage cheese, chopped spinach, chopped artichoke hearts, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper. Mix until well combined.

Assemble the Dish:

Add the spinach artichoke mixture to the bowl with the chicken pieces. Stir until the chicken is thoroughly coated with the mixture.

Bake:

Transfer the mixture to a 9×13-inch baking pan, spreading it evenly.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the top is lightly browned.
