1/4 cup crumbled feta cheese

2 tablespoons honey

Instructions:

Preheat oven: Preheat your oven to 400°F (200°C).

Prepare sweet potatoes: In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper.

Roast: Spread the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper. Roast for 20-25 minutes, or until tender and golden brown, flipping them halfway through.

Top and serve: Remove the baking sheet from the oven. Sprinkle the roasted sweet potato rounds with crumbled feta cheese and drizzle with honey. Garnish with chopped fresh herbs, if desired. Serve warm and enjoy!

Tips:

For extra crispy rounds, you can roast them at a slightly higher temperature (425°F) for a shorter time.

You can use any type of sweet potato for this recipe.

Feel free to adjust the amount of honey and feta to your liking.
