Chicken Parm and Subs

4-5 24 oz jars of siggy select tomato Basil (one garlic Basil was used this time) (3 for 4 subs and 2 for 1lb pasta/4cutlets)
1.5 15oz tubs of Progresso Italian style breadcrumbs
6lb chicken breast
7 large eggs
Flour
Lots of oil!
Dried basil oregano pepper thyme parsley
2lb low moisture whole milk mozzarella
Small tub of locatelli pecorino Romano
6 sub rolls

Cutlets

Sauce
Warm up the two jars of sauce
Add a lot of oregano parsley garlic powder
Some black pepper salt onion powder (till sweet)
Maybe thyme
Simmer and reduce
Some locatelli pecorino Romano to taste
(Like hickory’s sauce)
Assembly
sauce cutlet and add motz till covered edge to edge
Broil till brown
cut and sauce roll
Cut broiled cutlet in half and place in roll
Wrap in wax paper then aluminum foil

Pasta sauce came dry (not like Marcelo’s)
Try butter next time
Dad doesn’t use flour!!!!
