3-Ingredient Peanut Butter Cookies

🔥 Preheat the oven: Preheat your oven to 350 °F (180 °C). Line a large baking sheet with parchment paper and lightly oil it with cooking spray. Set aside.

🍯 Mix the dough: In a mixing bowl, stir together the peanut butter, maple syrup, vanilla (if using), and sugar (if using).

🍚 Add flour and salt: Add the flour and salt (if using), and stir well for about a minute. The mixture will thicken as you stir, but it should stay soft and sticky.

❄️ Chill the dough: Refrigerate the dough for 10 minutes to firm it up slightly.

🍪 Shape the cookies: Scoop about one tablespoon of dough and roll it between lightly oiled hands into a ball. It’s normal for the dough to be soft and sticky. Place each dough ball about an inch apart on the baking sheet.

🍴 Crisscross pattern: Lightly oil the back of a fork and press down on each dough ball twice in opposite directions to create a crisscross pattern.

🔥 Bake the cookies: Bake for 12-14 minutes at 350 °F (180 °C), placing them on the center rack. Once done, remove from the oven and let the cookies cool on the sheet for 30 minutes without touching them.

❄️ Cool and firm up: Transfer the cookies to a cooling rack and refrigerate to let them firm up even more.
