Smothered Pork Chops Like Mama Dips Makes

2 cups milk
1 egg, beaten
1/2 teaspoon salt
3 teaspoons pepper
3 cups all-purpose flour
2 teaspoons garlic powder
1 teaspoon cayenne
Bacon drippings or vegetable oil, for frying
6 to 8 (5 to 6 ounce) bone-in center-cut pork chops
Fried Onion Gravy (see page 41, warmed)

Combine the milk, eggs, salt, and 1/2 teaspoon of the pepper in a shallow bowl. In another shallow bowl, combine the flour, remaining 2 1/2 teaspoons of pepper, garlic powder, and cayenne.
Preheat the oven to 350°F.
Fill a large, deep skillet halfway with bacon drippings and heat to 350°F on a deep-fry thermometer. Dip the pork chops in the egg mixture.
Dredge in the seasoned flour, lightly coating the pork chops.
Fry in the drippings until golden brown, about 3 minutes on each side. (You might have to fry them in batches if they don't fit in the skillet in one layer without touching each other.)
Transfer the pork chops to a clean paper bag or paper towels to drain.
Place the chops in a single layer in a 2-inch-deep baking pan. Completely cover the chops with the gravy. Cover the pan with foil and bake in the oven for 45 minutes. Serve hot with the gravy.

Dolly says: "Sometimes when you're on the road, you gotta stop off at a place just because you can't get past the name of it. That was the case with Mama Dips, at least. When my crew and I were driving through Chapel Hill, North Carolina, on one of my tours, we just had to see what this place was all about. It turns out that Mama is a 6-foot-tall woman who has to dip down to serve food to her customers, which is how the place got its name. She's a girl after my own heart when it comes to cooking, because she loves the "dump method"--no recipes and no measures, just cooking by taste and touch. Mama Dips earned her reputation for serving up mouthwatering salmon patties, fried okra, squash casserole, and smothered pork chops. This is my version, as close as I can get to Mama D's."
