Crunchy Thai Peanut Quinoa Salad

1 cup of arugula, chopped

1/2 cup shredded carrots, chopped

1/2 cup shredded red cabbage or cabbage mixture, chopped

1 handful of cilantro, chopped

1/2 cup dry roasted peanuts

1/2 block of tofu, crumbled

1 cup cooked quinoa

add everything to a large serving bowl, then top with the dressing

creamy thai peanut dressing:

1/2 cup creamy salted peanut butter

2 tbsp sriracha

1/4 cup coconut aminos (can use soy sauce)

1/3 cup rice vinegar

2 tbsp sriracha

1/3 cup maple syrup

1 tsp ground ginger

enough water to thin

pour over the salad and toss to combine. this tastes best when it sits for an hour or even overnight, giving the veggies time to absorb the dressing! serve cold and enjoy :)

blueberry arugula feta salad

ingredients:

1 cup of arugula, chopped

1/2 cup red cabbage or cabbage mixture, chopped

2 cucumbers, diced

1 avocado, cubed

1 handful of walnuts, chopped

2 handfuls of blueberries

1/2 block of vegan tofu, crumbled

1/2 cup crumbled feta

add everything to a large serving bowl, then top with the dressing

creamy balsamic dressing:

1/3 cup olive oil

4 tbsp maple syrup

2 tbsp lemon juice

2 tbsp balsamic glaze (can use vinegar)

2 tbsp hummus

sea salt

garlic powder
