For the gyros
6 whole wheat pita flatbreads
2 lb chicken, cut in large slices
6 slices turkey bacon
2-3 cups spinach or lettuce leaves
1 cup pico de gallo (pre-made; see recipe elsewhere in this app)
⅔ cup feta cheese
For the marinade
1½ Tbsp olive oil
1 Tbsp fresh lemon juice
3 cloves garlic, minced
2 tsp dried oregano
1 tsp dried thyme
½ tsp paprika
½ tsp salt
½ tsp pepper
For the tzatziki sauce
¾ cup Greek yogurt
½ cup grated cucumber, squeezed dry
2 Tbsp chopped fresh dill (or 2 tsp
dried)
2 Tbsp fresh lemon juice
2 tsp lemon zest
1 clove garlic, minced
Salt and pepper, to taste

In a small bowl, whisk together marinade ingredients.
Cut chicken into large pieces and place into Ziploc bag or large bowl with marinade. Refrigerate for at least 2 hours.
Combine tzatziki sauce ingredients in small bowl. Leave in refrigerator until ready to cook.
Make pico de gallo if you don't already have leftovers from a different recipe.
Either empty Ziploc bag contents into skillet to cook OR discard marinade and cook chicken on grill until cooked through.
Cook bacon pieces on skillet.
Warm or char pitas on griddle or grill.
Spread each pita with thin layer of tzatziki sauce and top with a small handful of spinach/lettuce, a few pieces of chicken, one slice of bacon, a few spoonfuls of pico de gallo, and 2 Tbsp feta.

Notes from Rachel
I rarely add the cucumber (or the lemon zest) to the tzatziki sauce because that's a hassle. Tastes great without both, but I left them in the recipe because I don't know if you can still call the sauce tzatziki if it doesn't have cucumber.
In lieu of pico de gallo, you could use red onions and diced tomatoes.
Sometimes I add a couple tsp of water to the marinade when I want better coverage of the chicken.
