Protein Muffins

1 cup mashed banana
2 cups Kodiak pancake mix
1 egg
1/2 Greek yogurt
1/4 cups honey
1tsp vanilla extract
1tsp cinnamon
1/2 cup blueberries

1. Preheat oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups lightly with oil or cooking spray.
2. Prepare wet ingredients: In a large mixing bowl, combine mashed bananas, eggs, Greek yogurt, honey or maple syrup (if using), and vanilla extract. Mix until well combined.
3. Combine dry ingredients: In another bowl, mix together pancake mix and cinnamon.
4.Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the blueberries.
5. Fill muffin cups: Spoon the batter into the prepared muffin cups, filling each about 3/4 full. This makes 12 muffins.
6. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Cool and serve: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
