Ginger Pork Bowls

For the Sesame Ginger Pork
• 1/4 cup coconut aminos (or low-sodium tamari or low-sodium soy sauce)
• 1 tablespoon maple syrup
• 1 tablespoon rice vinegar
• 1 tablespoon toasted sesame oil
• 1 tablespoon sriracha (omit for no spice)
• 1/2 tablespoon avocado or olive oil
• 1 pound ground pork, 90% lean
• 3 garlic cloves, grated
• 1 tablespoon fresh grated ginger root
• 3-4 green onions, thinly sliced
• juice of 1 lime • sesame seeds, to garnish (optional)
For the Ginger Lime Bone Broth Rice
• 2 cups chicken bone broth (or reduced-salt)
• 1 cup brown rice, rinsed
• 2 teaspoons fresh grated ginger root
• Juice and zest of 1 lime
• Kosher salt, to taste
For the Cucumber Salad
• 1/2 tablespoon maple syrup
• 1/2 teaspoon kosher salt, additional to taste
For the Ginger Lime Bone Broth Rice
• 2 cups chicken bone broth (or reduced- sodium chicken broth or water)
• 1 cup brown rice, rinsed
• 2 teaspoons fresh grated ginger root
• Juice and zest of 1 lime
• Kosher salt, to taste
For the Cucumber Salad
• 1 english cucumber, small dice
• 3-4 green onions, thinly sliced
• 1 tablespoon rice vinegar
• 1 tablespoon sesame seeds (optional)
• 1/2 tablespoon maple syrup
• 1/2 tablespoon toasted sesame oil
• 1/2 teaspoon kosher salt, additional to taste

Instructions:
Make the Ginger Lime Bone Broth Rice
1. Bring the bone broth to a boil in a saucepan over medium high heat.
2. Once boiling, stir in the rinsed rice, reduce the heat to low, cover the saucepan, and cook until the liquid is absorbed and rice is tender, 30 to 40 minutes. If you are using white rice reduce the cook time to 12 to 16 minutes. Remove the saucepan from the heat and stir in the ginger and lime juice. Salt to taste. While the rice cooks, make the Cucumber Salad
1. Add all ingredients-diced cucumber, green onion, rice vinegar, sesame seeds, maple syrup, sesame oil, and salt — to a mixing bowl.
2. Toss well to combine and chill in the refrigerator for at least 15 minutes (or longer! it gets better as it sits). Salt to taste before assembling.
While the rice cooks, make the Sesame Ginger Pork
1. Combine the coconut aminos, maple syrup, sesame oil, and sriracha in a small bowl or jar and set aside.
2. Heat the avocado oil in a large skillet over medium heat. When the oil is shimmering, add the ground pork. Cook, stirring occasionally, until browned all over and beginning to crisp, 6 to 8 minutes. Tip: turn the heat to high right at the end to get delicious crispy bits, then turn back to medium.
3. Stir in the grated garlic and ginger. Mix continuously until aromatic, 1 to 2 minutes, then pour in the sauce. Bring to a simmer, then continue simmering while mixing with the pork until the sauce has reduced slightly and coated the pork, 2 to 3 minutes.
4. Remove from heat, stir in the green onion and lime juice, and let cool for at least 5 minutes to allow the sauce to continue thickening. Optionally, top with a garnish of sesame seeds.
