Vietnamese Braised Fish

4 catfish steaks (can also sub w/ salmon steaks)

2/3 cup chopped shallot (1 whole shallot)

4 chopped thai chili peppers

4 tbsp fish sauce

4 tbsp sugar

1 tsp chicken bouillon

1/2 can Coco Rico coconut soda (can sub w/ coconut water)

1 tbsp minced garlic

1/2 tsp black pepper

1 green onion for garnish

Marinate catfish steaks w/ 1/3 cup finely chopped shallot , 4 chopped thai chili peppers, 4 tbsp fish sauce, 2 tbsp sugar and 1 tsp chicken bouillon and mix well. Let that marinate in the fridge for 30 minutes.

After 30 minutes, take out catfish steaks from the fridge.

Heat up a clay pot, dutch oven or skillet on medium heat and add 2 tbsp sugar. Keep a close eye on the sugar so it does not burn and make sure to keep stirring once it starts to turn brown. Once the sugar has a nice dark brown caramel color (this took about 8 minutes), add 1 tbsp of minced garlic and 1/3 cup chopped shallot and mix constantly for 20 seconds and then add 4 tbsp of the coconut soda and let that cook for 2 minutes.

Then add your catfish steaks and the leftover liquid from the marinade to the pot/skillet and let that cook for 5 minutes and then flip fish and cook for another 5 minutes. Then add 1/3 can of coconut soda and cook that for 3 minutes and then turn down heat to medium low heat and cover and cook for another 5 minutes.

Take the lid off and flip the fish and cook for another 3-5 minutes so that the sauce thickens up a little bit

Add 1/2 tsp black pepper and garnish with chopped green onions and serve with rice
