George's Watermelon Ribs from the Loveless Cafe

4 or 5 tennis ball-size hickory wood chunks
1 jar Loveless Dry Rub, or 1 cup Barbecue Rub (page 74), Southwestern Spice Blend (page 77), or your favorite dry rub
1/2 cup brown sugar
2 racks St. Louis-cut pork spareribs
1 jar Loveless "Sweet with a Bite" BBQ sauce, or 2 1/2 cups of your favorite barbecue sauce
1 cup seedless watermelon cubes

Soak the wood chunks in water for at least 1 hour. Prepare a charcoal fire in the smoker and let it burn about 30 minutes, until the coals are uniformly gray.
In a small bowl, combine the dry rub and brown sugar. Rub the ribs all over with the mixture.
Drain the wood hunks and place them on the coals. Place the water pan in the smoker and add water to the fill line.
Place the ribs on the smoker rack and close the cover. Smoke until cooked through, about 1 hour.
Preheat the oven to 300°F.
Cut the ribs into 3-bone sections and place in a roasting pan.
Cover the ribs with the barbecue sauce and scatter the watermelon on top. Wrap the pan tightly with foil and bake for 1 1/2 to 2 hours, or until the meat is falling off the bone.
Serve warm, topped with the watermelon and the pan juices.

Dolly says: "One of my favorite haunts in Nashville, the Loveless Cafe, is always feedin' one country music star or another. Their country ham and red-eye gravy is good enough to write home about, but these ribs keep me coming back time and time again. The ribs and the heavenly biscuits with butter and sorghum syrup, really. They keep bringin' baskets of biscuits to the table as long as you eat them. George Harvell is the smokehouse guy at the Loveless. He shows up at the barbecue pit around 2 a.m. to get things cooking for the day.
Ask your butcher to cut your ribs St. Louis-style, which is a fancy way of askin' for them to remove the rib tips and the skirt meat."
