Mediterranean Chicken Orzo

4 boneless, skinless chicken breasts

1 cup orzo pasta

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1/4 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

2 cups chicken broth

In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, oregano, and basil. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the diced red bell pepper and zucchini, cooking for an additional 3-4 minutes until the vegetables are tender.

Stir in the orzo pasta and pour in the chicken broth. Bring to a boil, then reduce the heat to low and cover. Let it simmer for about 10-12 minutes, or until the orzo is cooked and has absorbed most of the liquid.

While the orzo is cooking, slice the cooked chicken into strips. Once the orzo is ready, gently fold in the cherry tomatoes and sliced chicken. Cook for an additional 2-3 minutes to warm through.

Remove from heat and sprinkle with crumbled feta cheese and fresh parsley before serving.
