Spicy Red Pepper Gnocchi

  • 750g gnocchi, uncooked

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 tsp red pepper flakes, plus more for serving

  • 1/2 cup roasted red peppers, diced as fine as possible

  • 1 cup heavy cream

  • 45g parmesan cheese, grated (plus more for serving)

  • 1 tbsp salted butter

  • Salt and pepper, to taste

步驟

1.⁠ ⁠Cook gnocchi according to the directions on the package.

2.⁠ ⁠Meanwhile, heat the olive oil in a large pot or skillet on medium. Add the garlic and cook until fragrant (1-2 minutes).

3.⁠ ⁠Add the tomato paste, red pepper flakes, and roasted red peppers and sauté for another 2 minutes.

4.⁠ ⁠Add the heavy cream, parmesan cheese, and butter. Stir until the cheese has melted and the sauce is thick. Season with salt and pepper.

5.⁠ ⁠Add the cooked gnocchi and toss to coat it in the sauce.

6.⁠ ⁠Serve with more parmesan cheese and red pepper flakes.
