Pork gravy (or all purpose gravy)

¾ cup pork (or meat of your choice) drippings. If no dripping, substitute with 1 TBSP butter
2 cups low sodium chicken broth
1 teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon dried thyme
¼ teaspoon dried sage
1 teaspoon salt plus more to taste
½ teaspoon black pepper plus more to taste
1/4 cup water
3 tablespoons cornstarch
Salt and pepper to taste

Add the pork drippings to a small saucepan along with the chicken broth, bouillon, and seasonings. Bring to a boil, then reduce to a simmer.
Meanwhile, to a small bowl, add the water and cornstarch and whisk well to combine.
Add the cornstarch slurry to the simmering gravy mixture. Whisk to combine. Reduce the heat to medium-low and continue whisking, until thickened. Season with salt and pepper, to taste.
Remove from heat and enjoy.
