Easy Red Veggie Lasagna

9 lasagna noodles
2 Tbsp olive oil
1 lb mushrooms, sliced
1 onion, diced
Salt and black pepper (to taste)
1 large head broccoli, finely chopped
Few handfuls spinach leaves
1 28-oz can crushed tomatoes
1 Tbsp Italian seasoning
1/2 tsp garlic powder
1 16-oz package cottage cheese
5 cups shredded mozzarella cheese
1/4 cup grated Parmesan

In a large pot of boiling salted water, cook lasagna noodles according to package instructions, set aside.
Cook mushrooms and onions over medium-high heat until soft. Season with salt, pepper, and garlic powder to taste. Stir in tomatoes and Italian seasoning until well combined. Drain excess water/juice if necessary (sometimes I scrape the tomato mixture to the side and water pools on the other side).
Preheat oven to 350 F.
Spread 1 cup tomato mixture onto the bottom of the 9x13 baking dish. Top with 3 lasagna noodles, then ½ of the cottage cheese, then 2 cups mozzarella cheese, then enough spinach leaves to cover thinly, then half the broccoli.
Repeat step 4 for a second layer.
Top with remaining noodles, tomato mixture, 1 cup mozzarella cheese, and Parmesan.
Place into oven and bake for 35-40 minutes, or until bubbling. Then broil for 1 minute, or until top is browned in spots.
Let cool 10 minutes.
