Ingredients for 4:

500g raw chicken breast seasoned with 1 tsp paprika, 1 tsp garlic salt, 1 tsp Italian herbs

250g dry pasta

1 onion

1 tbsp tomato puree

40g sun-dried tomatoes

20g parmesan

200ml chicken stock

200ml low fat cream

Season pasta sauce with 1 tsp paprika, 1 tsp garlic salt, 1 tsp Italian herbs

80g grated mozzarella

Handful of spinach

Pop the pasta onto boil for 12 minutes

Season the chicken breast with 1 tsp paprika, 1 tsp garlic salt, 1 tsp Italian herbs and fry until brown then set aside

To the same pan fry onions until soft

Next add tomato puree, 1 tsp paprika, 1 tsp garlic salt, 1 tsp Italian herbs, stock, low fat cream, parmesan. Leave to simmer for 5 minutes before adding the cooked chicken and spinach.

Simmer until the sauce thickens then add in the drained pasta and coat

Pour into an ovenproof dish and bake in the oven for 20 minutes at 180 degrees C

This will keep in the fridge for up to 3 days!
