Easy Red Meaty Lasagna

  • 9 lasagna noodles

  • 1 Tbsp olive oil

  • 1 lb ground beef or sausage

  • 1 onion, diced

  • Salt and black pepper (to taste)

  • Few handfuls spinach leaves

  • 1 28-oz can crushed tomatoes

  • 1 Tbsp Italian seasoning

  • 1 15-oz package ricotta or cottage cheese

  • 3 1/2 cups shredded mozzarella cheese

  • 1/4 cup grated Parmesan

  1. Preheat oven to 350 F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray.

  2. In a large pot of boiling salted water, cook lasagna noodles according to package instructions, set aside.

  3. Cook ground beef (or sausage) and onions over medium-high heat until cooked through, making sure to crumble the meat as it cooks. Drain excess fat if necessary. Season with salt and pepper, to taste. Stir in tomatoes and Italian seasoning until well combined.

  4. Spread 1 cup tomato/meat mixture onto the bottom of the 9x13 baking dish. Top with 3 lasagna noodles, then ½ of the ricotta (or cottage) cheese, then 1½ cups mozzarella cheese, then enough spinach leaves to cover.

  5. Repeat step 4 for a second layer.

  6. Top with remaining noodles, tomato mixture, 1 cup mozzarella cheese, and Parmesan.

  7. Place into oven and bake for 35-45 minutes, or until bubbling. Then broil for 2-3 minutes, or until top is browned in spots.

  8. Let cool 15 minutes.

From Rachel:

I frequently add a layer of finely chopped broccoli on top of, or in place of, the spinach for an extra dose of veggies without altering the flavor too much.
