One Lonely Leek Soup

1 Tbsp butter
1 shallot chopped finely (alex's note: 1/4 to 1/2 of an onion works fine in a pinch)
1 cup leeks thinly sliced (don't use too much of the dark green portion)
1 cup potato, peeled and diced
2 cups veg stock
1 to 1 1/2 cups cream
salt, black pepper and crushed red pepper to taste
pinch nutmeg
few drops lemon juice
2 oz stilton or other blue cheese
步骤
Melt butter in a saucepan. Add shallot/onion and leek, cooking until soft but not browned (about 2-3 minutes).
Add the vegetable stock to the pan. Peel and add the potatoes, cooking until just tender (10-15 minutes). Cool and puree in the food processor.
Separately, heat and reduce the cream; stir into the blended leek mixture. Bring to a gentle boil. Add seasonings and lemon juice.
Pour into bowls and top each with 1/2 ounce crumbled Stilton. (OP says to add the cheese to the actual soup with the lemon juice and seasonings. The first time I made this, I didn't have Stilton, so I'll update if I do I guess).

i found this in some comment online. i hope it isn't complete bullshit or i'll be really sad. the original recipe used chicken stock but i don't feel like adding that so i won't
