PARTY SIDES Street Corn Pasta Salad

2 C uncooked shell pasta
4 Corn on cob, cooked then cut off the cob
3 Green onions, chopped
½ C Cilantro, chopped
1 Jalapeno, finely chopped
6 Bacon strips, cooked and chopped
½ C Queso Fresco, crumbled
1 Avocado, cubed
Dressing:
½ C mayo,
¼ tsp chipotle powder,
3 Tbs lime juice + zest,
⅛ tsp Cumin,
¼ tsp garlic powder,
¼ tsp paprika,
½ tsp chili powder,
1 tsp sriracha,
¼ tsp salt (or more to taste),
⅛ tsp pepper.
Bring a pot of SALTED water to boil and cook shell pasta according to box instructions. Cook bacon till crispy. Rub butter, salt, and pepper on corn and cook on grill or stove. In a large bowl, mix dressing ingredients then add cilantro, bacon, jalapeños, green onions, queso, avocado, pasta, and corn. Toss to combine all the ingredients well. Enjoy!
