Zucchini Pizza Boats

4 medium zucchini

Pizza sauce

Shredded mozzarella

Toppings and seasonings as desired

Heat oven to 400 F

Prep baking tray with foil

Wash zucchini

Halve each zucchini and scrape out the center with a spoon. Sprinkle with salt

Spoon on pizza sauce, mozzarella and toppings

Bake 20 minutes and broil until the top browns
