    Tomato Burrata Linguine “Shag Me Up the Arse Pasta”

    Ingredience

    • 500g cherry tomatoes

    • 4 cloves garlic

    • 1 ball of burrata or 2tbsp of mascarpone

    • 150g diced chorizo

    • 400g linguine

    • 80g Parmesan

    • 1 tbsp oregano

    • 1 tbsp chilli flakes

    • 1 handful basil

    • Salt & Pepper to taste

    Pokyny

    1. Start off my frying some chorizo in olive oil until all the fat is rendered and it’s beautifully crispy.

    2. Put it to one side but save that chorizo oil. That’s what we’re going to fry our tomatoes and garlic in.

    3. Cook until they’re soft enough to burst and spunk their sweet juices all over the pan.

    4. This is the foundation of the sauce.

    5. Stick the tomato and garlic into a blender with a ball of luscious, velvety, milky burrata.

    6. Pulse until it’s emulsified then it’s time to cook your pasta in salty water.

    7. Decant that silky smooth sauce into a pan on low heat.

    8. Add salt and pepper to taste, as well as some oregano and chilli flakes.

    9. Fresh basil is going to elevate this sauce into the stratosphere

    10. Loosen it up with pasta water and then throw in a load of parmesan.

    11. Then you’re ready to introduce the pasta. Mix it up until the sauce sticks to the pasta like glue and I man nah play number 2.

    12. Then you’re ready to serve. Some recipes are a pain in the arse with loads of prep but this one is actually fun. It makes 2 big portions for two hungry people. And whoever you’re cooking this for will be incredibly grateful to have you in their life. Despite it all being me. You are welcome.
