Sausage Casserole (Gerard's)

Cleaned but unpeeled Carrots (slice/grate)
2 large sticks of Celery (destring and finely slice)
1 large brown or red Onion
4 cloves of garlic (slice)
2 tbsp Olive Oil
12 precooked sausages (slice)
4 (small hellers) chorizo sausages (optional but adds lovely peppery taste)
1 tin of Italian whole or diced tomatoes
1 tsp table salt (or to taste)
1 tsp ground pepper
3/4 cup of water or chicken stock
1/2 tsp of smoked paprika (optional)
Pokyny
Add onion, garlic and all vegetables, olive oil, salt and pepper and sauté until aromatic.
Add sausages, chorizo, water/stock, paprika
If pressure cooking sauté in the pressure cooker, and add everything to this. Pressure cook on meat setting for 15-20 minutes.
My guess for slow cooker or over casserole dish:
If cooking in slow cooker maybe 90 minutes, or more depending on consistency of casserole.
In a casserole dish in oven maybe 60 minutes on 180
Serve with rice or mash potato.
