maple-sesame smashed sweet potatoes

4 medium sweet potatoes, cut into
½-inch-thick rounds
2 tablespoons extra-virgin olive oil
Fine pink Himalayan salt
2 tablespoons pure maple syrup
½ teaspoon ground cinnamon
½ to 1 teaspoon ground cayenne pepper
4 tablespoons (½ stick) salted butter at room temperature
2 tablespoons toasted sesame seeds (see Note on page 53)
Flaky sea salt
Fresh mint leaves, for serving (optional)

1. Preheat the oven to 425°F.

T These potatoes are going to surprise you. In fact, the recipe might sound odd to you, but you just have to trust me on it. They're a super-fun way to totally reinvent the average sweet potato. Toss thick slices of baked sweet potato in a sweet, spicy maple mix, then give them a smash before broiling to create rounds that become crispy in some spots and soft and buttery in others. Just after the potatoes come out of the oven, top them with butter and watch it melt. Just try them—they're what I like to describe as roll-your-eyes- back delicious.
