    BBQ Chickpea And Bell Pepper Flatbread

    Ingredience

    1 can Garbanzo Beans

    1 Shallot

    1 Bell Pepper

    2 Flatbread

    2 tsp BBQ spice blend (or chili powder, paprika, onion powder, garlic powder, etc)

    3.5 oz. BBQ Sauce

    5 oz. Shredded Cheese (Mozzarella and/or Cheddar)

    Sour cream to drizzle, if desired.

    Pokyny

    Oven to 425.

    Drain beans.

    Cut ends and remove outside layers of shallot. Slice into 1/4 inch strips.

    Cut pepper into 1/4 inch strips and halve.

    Place flatbread on a sheet. Lightly oil and toast 5-6 minutes.

    Heat cooking oil. Saute chickpeas, shallot, bell pepper. Season with BBQ spice and salt/pepper to taste. Cook about 5 minutes, until veg are soft/ lightly brown. Remove from heat and coat with 1 tbsp BBQ sauce.

    Carefully spread remaining BBQ sauce over flat breads. Top with veg and sprinkle cheese. Bake 5 more minutes, until cheese is melted.

    For sour cream, mix with one teaspoon water and thin sliced scallion to drizzle on final flatbread if desired.

    Poznámky

    Consider adding pineapple, or replacing shallots with pickled onion 🙂
