Gochujang Pasta

8 ounces dry fusilli (or pasta of choice)
1 tbsp unsalted butter
1/2 shallot, diced
3 tbsp gochujang
4 garlic cloves, minced
2/3 cup heavy cream
1/4 cup freshly grated parmesan, plus more for garnish

Cook pasta until al dente, drain, and reserve 1/4 cup of pasta water.
In a large pan over medium heat, melt butter. Add shallot, garlic, and sauté for 3 minutes until fragrant. Stir in gochujang and stir until the paste deepens in color.
Stir in reserved pasta water until mixture is smooth. Bring to a simmer. Stir in heavy cream and simmer for 2 minutes. Add parm and simmer until sauce thickens, stirring occasionally.
Add pasta to sauce and toss to coat. Garnish with furikake and more parm. Enjoy!
