    Lentils with Chorizo (Lentejas a la Riojana)

    Ingredienser

    • White onion diced

    • 3 gloves of garlic

    • One carrot diced

    • Green bell pepper

    • Chorizo sausage

    • Cured bacon/pancetta

    • 2 Roma tomatoes

    • Spanish paprika

    • Bay leaf

    • Lentils 300g

    • Chicken stock 1L

    • Olive oil

    Vejledning

    1. Add the garlic and onion to a Dutch oven and soften for 3 minutes.

    2. Add carrot and green bell pepper and cook a further 5 minutes. Season with salt and pepper.

    3. Add sliced chorizo sausage and bacon. Cook for a few minutes.

    4. Add 1/2tsp of paprika and grated tomato, cook down for 3-5 minutes.

    5. Add lentils and bay leaf. Stir and toast lentils for a few minutes.

    6. Add chicken stock and bring to the boil. Reduce heat to medium low and cover. Cook 25-30 minutes until the lentils are cooked. Taste and adjust seasoning as necessary. Serve and enjoy!
