    Lamb Koftas with Roasted Veggies

    Ingredienser

    800 g Lamb mince

    1/2 Red onion

    1 handful Fresh parsley

    4 Cloves of garlic

    1 tspn Cumin

    1 tspn Paprika

    1 tspn Chilli flakes

    1 tspn Italian mixed herbs

    400 g Potatoes

    1 Red pepper

    1 Courgette

    1 Small aubergine

    1 tbsp Garlic powder

    1 tspn Italian mixed herbs

    1 tspn Paprika

    1 Salt

    1 Pepper

    3 tbsp Olive oil

    4 tbsp Greek yoghurt

    1/2 Lemon

    2 Cloves of garlic

    1 tbsp Honey

    1 Salt to taste

    Vejledning

    Step 1

    Preheat the oven to 200°C (400°F).

    Step 2

    Chop the potatoes into small cubes, red pepper into thin strips, courgette into rounds, and aubergine into bite-sized chunks. Spread onto a baking tray, drizzle with olive oil, and season with garlic powder, Italian herbs, paprika, salt, and pepper. Toss well and roast for 30-35 minutes, flipping halfway.

    Finely dice the red onion, mince the garlic, and chop the parsley.

    Step 4

    In a bowl, mix the lamb mince with onion, parsley, garlic, cumin, paprika, chilli flakes, Italian herbs, salt, and pepper. Shape into small koftas.

    Step 5

    Heat a pan over medium-high heat with a little oil. Fry the koftas for 10-12 minutes, turning occasionally, until golden brown and cooked through.

    Step 6

    In a small bowl, mix Greek yoghurt, lemon juice, minced garlic, honey, and salt to make the sauce.

    Step 7

    Serve the lamb koftas over roasted veggies with a drizzle of lemon garlic yoghurt.
