Add shrimp cubes. Add salt and stir it with clean hands. This method will improve the protein and refresh the shrimp. In the process of cleaning the shrimp, it must be dried with kitchen paper. This process takes about a minute. Add pepper, soup, and Shaoxing wine and continue to stir. Add egg whites and stir for about half a minute. Add shredded winter bamboo shoots and pork diced, and stir gently. Add cornstarch, it can absorb water when cooking. Add sesame oil and raw oil. After stirring, cover and refrigerate for 20 to 30 minutes.
How to make shrimp dumplings: Add the noodles and half of the cornstarch. After stirring, add 170 ml of boiling water. Stir while adding. Stir well, cover and bake for two minutes. Then add the remaining cornstarch and knead to make a dough.
Add vegetable oil and knead the dough until soft and cooked. Put the dough in a plastic bag, let it rest for five to ten minutes, and set aside.
Use two pieces of kitchen paper, fold it and add 1 tablespoon of oil on top of the paper, set aside.
Separate the dough, each with a weight of ten grams. Round the dough. Spread vegetable oil on both sides of the kitchen knife, and squash the dough down with the kitchen knife. Then gently remove the kitchen knife from the dough. The area of the peripheral skin should be thin, resulting in a little transparent. The skin in the center should be thicker to prevent it from cracking when steamed.
