EASY MARSHMALLOW VANILLA CRÈME FILLING

11⁄4 cups powdered sugar, plus more if needed

2 cups (4 sticks) unsalted butter, slightly softened and cut into chunks

2 teaspoons vanilla extract

1⁄8 teaspoon salt

2 7-ounce jars or one 16-ounce jar marshmallow crème

Vejledning

Combine the powdered sugar, butter, shortening, vanilla, and salt in a large bowl. Beat on low, then medium, speed until very light and well blended. Scrape down the sides as needed. Beat in the marshmallow crème until evenly incorporated. If the filling looks too soft, beat in more powdered sugar until stiffened as desired.

Spread enough filling on the undersides of half the whoopie pies to yield a 1⁄3- to 1⁄2- inch-thick layer. Cover them with similar-size rounds, top side up, gently pressing down until the filling spreads to the edge.

Storage: Store this, airtight in the refrigerator, for up to 1 week. It can be frozen, airtight, for up to 1 month
