Baked Veggie Fajitas

Ingredienser

  • 2 medium sweet potatoes, peeled and diced

  • 2 bell peppers, ideally different colors, de-seeded and sliced

  • 2 red onions, sliced

  • ¾-1 packet fajita seasoning

  • 1 (15-oz) can chickpeas (garbanzo beans), rinsed

  • Sliced or shredded cheese (any kind, but medium or sharp cheddar are yummy here)

Vejledning

  1. Preheat oven to 400°F.

  2. Put sweet potatoes on parchment-lined pan, drizzle with ½ tsp olive oil, and bake for 15 minutes.

  3. Mix peppers, onions, fajita seasoning, and remaining 2½ tsp oil in a bowl.

  4. After sweet potatoes have been cooking 15 minutes, add pepper mixture to tray, stir, and bake another 20 minutes.

  5. Add chickpeas to tray, stir, and bake 2-3 more minute.

  6. Place tortillas topped with cheese slices on top of mixture and bake until cheese melts (1-2 minutes).

  7. Spoon pepper/chickpea mixture onto the cheesy tortillas and serve.

This recipe can be altered in numerous ways, including adding tofu, shredded chicken, tomatoes, spinach, cojita cheese, etc., and it even tastes great without the onions.

Jenn edit: I started cooking the chickpeas the same length of time as the peppers rather than adding them at the end. I think I like it better because they get crispier.

The original recipe suggested serving over rice or with a side of coconut yogurt, but I haven't tried either as I found it great as-is.

This is now a go-to recipe for me. I frequently omit chickpeas and add regular potatoes (diced and cooked along with sweet potatoes). So many variations, so easy, so good.
