    Jollof Rice

    Ingredienser

    400g basmati rice

    1 tin of chopped tomatoes

    1 red pepper

    1 red onion

    1 garlic clove

    Chilli powder (optional)

    1 tsp Oregano

    1 tsp Black pepper

    1 tsp Smoked paprika

    1 tsp Cumin

    60g tomato puree

    Meat-free burgers

    Vejledning

    Chop and cook half onion in a wok with oregano. (about 8 minutes)

    Meanwhile, wash rice thoroughly to remove the starch. Par-boil the rice for 5 mins until almost cooked, drain and set aside.

    Make sauce in a blender: tomatoes, pepper, half the red onion, the garlic and chilli until smooth.

    When onion is cooked, add the other spices with 1 tsp sea salt, cook for a few mins more, then add the tomato purée and cook for 1-2 mins.

    Add half the tomato and pepper mix (freeze the rest for future use). Add the semi-cooked rice and mix thoroughly to coat with the sauce.

    Cook for 5-10 minutes more. Season to taste.

    Ready to serve with chopped up burgers.
