    Green Goddess Salad (with a Twist

    So obsessed with the colour and flavour of this viral salad! It also made a ton so we had enough for about 4 servings 🙌I’ve added cooked chicken breast here but also love it with pan fried tofu for plant based option 🌱 and if you don’t have quinoa - any grain will do!

    For the green sauce

    Handful of fresh spinach

    1/2 bunch chives (approx. 10g)

    Handful of fresh basil leaves

    Handful of fresh parsley

    2 spring onions (sliced)

    60g cashew nuts

    good pinch of sea salt

    1 medium avocado (sliced)

    1 large garlic clove (crushed)

    Juice from 1 lemon

    60ml extra-virgin olive oil

    150ml water (& extra)

    For the rest

    1 medium cucumber (finely diced)

    1 small white cabbage (diced)

    250g cooked quinoa

    3 spring onions (finely sliced)

    1️⃣Blend all the ingredients for the green sauce until smooth, adding water as needed until smooth.

    Vejledning

    In a large bowl, mix diced cucumber, cabbage, cooked quinoa, protein of choice and spring onions, then toss with the green sauce.
