Dressing Ingredients

This homemade dressing is delicious and the key to the La Scala chopped salad. I’d argue that iceberg lettuce is the other key ingredient, and that you could mix up everything else, and still have a delicious salad with this dressing. It’s made with simple ingredients and is the most delicious dressing I’ve ever had.

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

2 tsp dijon mustard

1/2 tsp salt

1/2 tsp pepper

1/4 cup grated pecorino romano

La Scala Chopped Salad Ingredients

These delicious ingredients are my favorite, but you can really make this salad your own. My husband insisted that I mention red onion as an optional ingredient. But you can add anything to make a more hearty salad, from salami or chicken breast to artichoke hearts and bell pepper. (I like yellow peppers.)

Deli turkey or Italian salami

Iceberg lettuce, finely chopped

Shredded or chopped mozzarella

1 can of chickpeas, marinated in the dressing if you have time

How to Make It

Step 1: Combine dressing ingredients into a small food processor or blender and mix until blended.

Step 2: Add lettuce, salami or turkey, mozzarella, and chickpeas into a large bowl.

Step 3: Toss with vinaigrette until the salad is coated.

Step 4: Sprinkle with a little black pepper (they always offer this at the restaurant and it’s a great touch).

Store what’s left over in an airtight container, but if you add dressing, I would recommend eating the remainder later that day.

For an added and very authentic bonus, add some warm, fresh bread and dip in marinara. I always ordered this to start at La Scala and it’s so good.

Notater

I don’t really go off a set amount of ingredients for anything other than the dressing. Just throw this salad together with however much of everything that you’d like. The original chef Jean Leon’s original recipe has salami, and it’s a great salad, but I’ve always preferred the turkey chop. If you want extra protein, add more turkey or do a mix of turkey and salty salami. I’ve found that the amount of ingredients means nothing, and I could order this without garbanzo beans (that’s how I used to eat it) and I’d still love it. the crisp lettuce is obviously a must, but it’s all about the dressing, which truly makes this salad. So add whatever you want and make it your own. I like to double the dressing recipe so I have extra for the week.
