Cowboy Butter Pasta

1 ⅛ lb pasta, dry

1 cup butter

4 cloves garlic, minced

2 shallots, diced

2 tsp dijon mustard

1 tsp dried thyme

2 tsp smoked paprika

½ tsp cayenne pepper

½ tsp red pepper flakes

½ cup parmesan cheese, grated

4 tbsp chives, chopped

4 tbsp parsley, chopped

4 tbsp, lemon juice

Salt and pepper, to taste

Anweisungen

  1. Cook the pasta al dente according to the directions on the package. Reserve 1/2 cup of the starchy cooking water before draining.

  2. Meanwhile, melt butter in a large skillet over medium-low heat.

  3. Add garlic, shallot, Dijon mustard, dried thyme, smoked paprika, cayenne and red pepper flakes. Stir occasionally until the garlic and shallot are fragrant (2-3 minutes).

  4. Add the cooked pasta to the skillet and toss to coat it in the butter.

  5. Sprinkle with parmesan cheese and add a small amount of the pasta water. Toss the pasta until the cheese has melted and the sauce is thick and glossy. Add more pasta water if needed to thin out the sauce.

  6. Add the chives, parsley and lemon juice; stir to combine. Season with salt and pepper to your taste and serve.
