Zutaten

Make Herb salt - Grind up in a mortar & pestle (or food processor)

Pink Himalayan salt

Fresh Rosemary

Thyme

Lemon Zest

Black Pepper

Anweisungen

Cut chicken breast in half horizontally & vertically

Pat chicken breast dry on both sides (w/paper towel)

Add herb salt on both sides of the breast.

Let sit for 10 minutes.

Saute in Olive Oil

Start it at a medium to medium low. Put the oil in once you’ve given the pan a little time to get up to temperature on its own. Then to test if the oil is at the right temp, just get your fingers a little wet under the tap and flick the water in the oil. If it gives a steady sizzle, you’re good to go! If it is more of an angry crackle, or the olive oil starts to give off a little smoke, it’s too hot and will burn the outside of the chicken before the inside is fully cooked.

Once you put the chicken in, if you have several pieces in the pan at the same time, turn the heat up a little right after putting it all in the pan (since the cold meat will bring down the pan’s heat). Then turn in back down to medium, medium low after a couple minutes.
