    Cajun Chicken Pasta Bake

    Zutaten

    600 g Chicken tenderloins

    1 Red pepper

    1 Green pepper

    1/2 Red onion

    2 Green chillies

    2 Cloves garlic

    250 g Macaroni pasta (uncooked)

    2 tbsp Italian mixed herbs

    3 tbsp Cajun seasoning

    1 tin Diced tomatoes

    4 tbsp Tomato paste

    1/2 Lime

    Handful Parsley

    100 g Mascarpone

    100 g Light mozzarella

    Anweisungen

    Step 1

    Finely dice the chicken, red pepper, green pepper, red onion, green chilli & garlic.

    Step 2

    Get the macroni pasta cooking to the packeted instructions so it's ready to add to the pan.

    Step 3

    In the meantime, chuck the chopped veggies and chicken into a frying pan with a tbsp of olive oil.

    Step 4

    Throw over the Italian mixed herbs and cajun seasoning.

    Step 5

    Stir and fry until the chicken is almost cooked through.

    Step 6

    Pour in the diced tomatoes, tomato paste, fresh chopped parsley and a squeeze of lime.

    Step 7

    Drop the heat and stir for a few minutes until it comes to a gentle simmer.

    Step 8

    Throw the mascarpone and cooked pasta into the pan and give it a final stir.

    Step 9

    Pour the pasta into a baking tray, top with mozzarella and chuck under the grill until the mozzarella is golden and crispy - enjoy!
