    Satay Chicken Skewers Bowl

    Satay chicken skewers with a peanut butter dressing, served with wholegrain rice & tenderstem broccoli 🥜 A healthy, high protein 20 minute meal, with 59g of protein per bowl!

    Recipe below makes 1 portion)

    Satay Sauce Ingredients:

    40ml light coconut milk

    15g smooth peanut butter

    1tbsp light soy sauce

    1tsp mild curry powder

    ¼ white pepper

    Squeeze of lime juice

    Chicken Satay Ingredients:

    200g chicken breast

    1tsp minced garlic

    ½ minced ginger

    1tsp thai red curry paste

    Bowl Ingredients:

    125g wholegrain rice

    40g tenderstem broccoli

    Garnishes: 5g crushed peanuts, pinch of chilli flakes, spring onion greens

    Anweisungen

    In a small bowl, mix all the satay sauce ingredients listed above into a smooth sauce & set aside

    Cut the chicken into pieces & add to another bowl, with the satay chicken ingredients listed above & half the satay sauce you made earlier

    Mix to coat (& if preferred, marinate overnight)

    Skewer the chicken (if using wooden skewers, soak them in water before to stop them burning)

    Spray with a little oil & air fry on 200C for 15 mins

    When the chicken has 5 mins cook time left, air fry or steam the tenderstem broccoli & heat your wholegrain rice

    Mix the remaining satay sauce with 1tbsp water to thin

    Serve in a bowl, drizzle the remaining satay sauce over the chicken & garnish with crushed peanuts, chilli flakes & spring onion greens
