    Chipotle Chicken Loaded Sweet Potatoes

    A super easy dinner to throw together midweek 🤤 packed with seasoned chicken, peppers and onion in a chipotle tomato sauce. Topped with cheese and a drizzle of bang bang sauce for an extra boost of flavour 😍

    Ingredients (serves 2):

    500g sweet potato chunks (I use frozen)

    200g diced chicken breast

    Tsp smoked paprika

    ½ tsp mild chilli powder

    Tsp italian herb seasoning (can sub mixed herbs)

    Red pepper diced

    Red onion diced

    Tsp chopped garlic

    1 and ½ tsp chipotle paste

    100g passata

    50ml water

    30g reduced fat cheddar grated

    20g red Leicester cheese grated

    A few sprigs of fresh coriander chopped

    Bang bang sauce:

    30g lighter mayo

    10g reduced sugar sweet chilli

    ½ tsp sriracha sauce

    Start by cooking the sweet potato according to packet instructions.

    Add the chicken to a bowl and season with the smoked paprika, chilli powder and herb seasoning. Combine and transfer to a hot pan.

    Cook for around 8 minutes until fully cooked.

    Once the chicken is cooked, add in the red pepper and onion. Fry for a few minutes until soft.

    When the veggies have softened, add in the garlic, chipotle paste, passata and water. Leave to thicken slightly before folding in the cooked sweet potato chunks.

    Top with the grated cheeses. Cover and leave for a few minutes to melt.

    Whilst the cheese melts, mix together the bang bang sauce ingredients. Loosen with a tsp water if needed.

    Once the cheese has melted, drizzle over the bang bang sauce.

    Garnish with the fresh coriander before serving.
