Chicken Taquitos

2 cups cooked and shredded chicken (used one large breast, but you could do rotisserie chicken too)

4 oz cream cheese, softened

1/3 cup salsa (I used Matteos)

1 tbsp lime juice

1/2 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp salt

1/2 tsp pepper

1 1/2 cups shredded Mexican or Colby Jack cheese

2 green onions, sliced

8-10 small flour tortillas

Cooking spray or a light brushing of olive oil

Optional add ins:

1 diced jalapeno

1/4 bunch diced Cilantro

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.

Prepare Filling: In a large mixing bowl, combine cream cheese, salsa, lime juice, cumin, chili powder, garlic powder, salt, and pepper. Mix until smooth. Mix in cilantro and jalapeno here if adding.

Add Chicken and Cheese: Fold in the shredded chicken, shredded cheese, and green onions, mixing until well combined. Taste the mixture here and see if you need to add any more salt and pepper.

Assemble Taquitos: Place about 2-3 tablespoons of the chicken mixture on the lower third of each tortilla. Dont fill the the outside edges as it leaks out when baking. Roll tightly and place seam side down on the prepared baking sheet.

Bake: Lightly spray or brush the tops of the taquitos with cooking spray or oil. Bake for 20 minutes, or until golden and crispy on the edges.

Serve: Serve hot with sour cream, salsa, guacamole, or my quesadilla sauce!

Notes

Make Ahead: These taquitos can be assembled ahead of time and stored in the fridge or freezer before baking. Bake directly from frozen, adding a few extra minutes.

Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven to retain crispiness.
