Creamy Chicken Piccata

1 lb chicken breast cut thinly
1 cup flour
300 ml heavy cream
Large glug white wine
Chicken stock cube
1 whole lemon
1 whole shallot diced
1/4 jar sun dried tomatoes
Spinach
2-3 tbsp olive oil
2 tsp garlic powder
2 tsp onion powder
2 tsp dried oregano
2 tsp black pepper
1-2 tsp salt
Parsley to garnish
1/2 stick butter divided
Rice to serve
Instrucciones
Butterfly your chicken thighs and coat in salt, pepper, garlic powder, onion powder and fried oregano.
Fry chicken in a skillet or frying pan and set aside.
Get your rice on to cook.
Fry your onions and any veggies (I used spinach and courgette) and add your sundried tomatoes too. Fry for a few mins or until happy.
Deglaze the pan with your large glug of white wine. Use as much as you want and cook down.
Add your cream into the pan along with the stock cube and stir until dissolved
Add lots of handfuls of spinach as desired, and some sweetcorn.
Add a handful of freshly chopped parsley if available.
Bring to the boil and loosen the sauce if needed with some water or any spare cream. Adjust taste with salt and pepper.
Add the chicken back into the sauce to warm up.
Serve with rice.
