Ingredientes

1 onion

2 garlic cloves

1 red pepper

1 yellow, green, or orange pepper

1 carrot

1 tin chopped tomatoes

2 tbsp soy sauce

2 tsp dried oregano

2 tsp dried thyme

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

1 tsp paprika

1 cup of rice

2.5 cups of vegetable stock

1 tin of chickpeas

1 tin of kidney beans

Instrucciones

Prep all the veggies by chopping into small pieces.

Add some oil to a skillet or large pot and when it's hot add the chopped veggies and cook over medium-high heat for 5 minutes.

Add the crushed tomatoes and cook for another 5 minutes.

Add the soy sauce and the spices and stir. Then add the rice and the water or vegetable stock and bring to a boil. Cook over medium-high heat for 15 minutes or until the rice is cooked.

Add the chickpeas and beans, stir and cook 1 to 2 minutes more.
