Crispy Skin Duck Breast

2 duck breasts

Instrucciones
preheat the oven 200 degrees with a baking tray inside it
generously salt and pepper the skin of the duck breast
on a COLD pan on the hob, with NO oil begin to cook the duck breast skin side down
wait for the fat to render out of the skin and then turn the duck over with high heat to seal the duck very quickly
put them in the over skin side down 6-8 minutes. If you’re transferring to a tray (if your frying pan can’t go in the oven) make sure it’s hot first
once done check the non skin side is still quite bouncy, only slightly resistant
leave them to rest and cool down before slicing them to avoid them loosing their juiciness
slice thickly and at an angle to avoid it cooling down too fast
