‘Ridiculous Eggs’

Ingredientes

1 Yukon gold potato finely cubed

Seasonings: onion, garlic, rosemary, paprika, turmeric, etc

1-4 eggs

1 tomato

Cheese, any kind

Instrucciones

Medium heat pan with oil, put in finely diced potato and cook until they start to brown. Add in seasonings and then crack eggs into the pan. Allow to begin to cook through. Add slices of tomatoes on top and cheese. Add more seasonings. Flip and cook on other side. Done!
