Sausage & Kale Orecchiette

12 oz orecchiette pasta
1 lb Italian sausage (spicy or mild)
2 tbsp olive oil
3 cloves garlic (minced)
1/2 tsp red pepper flakes (optional)
1 bunch kale (stems removed, chopped)
1/2 cup chicken broth
1/4 cup grated Parmesan
Salt & pepper to taste
Lemon zest (optional)
Instrucciones
Cook orecchiette, save 1 cup pasta water, and drain. 💧
Brown sausage in olive oil, remove from pan.
Sauté garlic + red pepper flakes, then add kale until wilted. 🥬
Return sausage to the pan, add broth, cooked pasta, and some reserved pasta water to loosen it up. 💦
Stir in Parmesan, season with salt & pepper, finish with lemon zest.
Enjoy with extra Parm on top
