Strawberry Mousse

225g Strawberries
1 tsp Lemon Juice
1 cup Heavy Whipping Cream
38g Granulated Sugar
2 tbsp Confectioner’s Sugar (Omit if Strawberries are very sweet)
Instrucciones
1. Rinse Strawberries. Cut off tops, and chop into quarters. Blend.
2. Add strawberry purée, lemon juice and granulated sugar to small saucepan.
3. Stir over medium heat; lower the heat if it starts to raise too much. Continue until the reduction covers the back of a teaspoon, about 10-15 minutes.
4. Strain purée through mesh strainer to remove seeds. You should have 1/2 cup of strawberry reduction.
5. Allow the reduction to cool to room temperature. Freeze mixing bowl to expedite whipping cream.
6. Add 1 cup Heavy Whipping Cream + 1 1/2 tbsp Confectioner’s Sugar to the mixing bowl. Beat whipping cream until peaks begin to form.
7. Gently fold strawberry reduction into heavy whipping cream. Place combination into plastic gallon bag. Pipe mousse into 3 cups.
8. Chill for 30 minutes (recommended) or serve as is, with a dash of whipped cream and a slice of strawberry.
Notas
This is a very lightweight, creamy strawberry mousse; you can alter the recipe so that the purée and whipping cream are 1:1, but any more purée than that will make it soupy.
