Sausage and Chorizo Ragu

- 8 sausages 
- 100g chorizo 
- 1 onion 
- 2 carrots 
- 2 celery sticks 
- 3 cloves garlic 
- 2 tbsp tomato paste 
- 180ml red wine 
- 1 stock cube/pot 
- 1 tin chopped tomatoes 
- 2 tbsp oregano 
- Salt 
- Pepper 
- 1 tsp Worcestershire sauce 
- 80ml double cream 
- 80g parmesan 
- Pasta 
- Fresh parsley to garnish. 
Instrucciones
- Start off by taking the skin off your sausages and cooking them for 10 mins until they’re nice and brown. 
- Take them out then add a diced onion, 2 diced carrots and 2 diced celery sticks. 
- Cook until soft then add 3 cloves of chopped garlic. 
- After a minute add 2 tablespoons of tomato paste and stir. 
- 2 minutes later, throw in 180ml of red wine and simmer for about 8 minutes until it’s reduced by half. 
- Toss in some beef stock and stir it in, then add your sausage back in. 
- Mix and add a tin of chopped tomatoes. 
- Stir that all together and add about 100ml of water before simmering for 20 minutes. 
- Add 2 tablespoons of oregano, salt and pepper to taste, as well as a teaspoon of Worcestershire sauce. 
- Now get your pasta into some heavily salted water to cook. 
- Meanwhile add about 80ml double cream and stir before grating in about 80g of parmesan. Or as much as you want to be honest. 
- Simmer it until your pasta is done then add some pasta water, then toss the pasta in with the sauce until it’s covered in that stunning ragu.
