3-Ingredient Peanut Butter Cookies

đ„ Preheat the oven: Preheat your oven to 350 °F (180 °C). Line a large baking sheet with parchment paper and lightly oil it with cooking spray. Set aside.
đŻ Mix the dough: In a mixing bowl, stir together the peanut butter, maple syrup, vanilla (if using), and sugar (if using).
đ Add flour and salt: Add the flour and salt (if using), and stir well for about a minute. The mixture will thicken as you stir, but it should stay soft and sticky.
âïž Chill the dough: Refrigerate the dough for 10 minutes to firm it up slightly.
đȘ Shape the cookies: Scoop about one tablespoon of dough and roll it between lightly oiled hands into a ball. Itâs normal for the dough to be soft and sticky. Place each dough ball about an inch apart on the baking sheet.
đŽ Crisscross pattern: Lightly oil the back of a fork and press down on each dough ball twice in opposite directions to create a crisscross pattern.
đ„ Bake the cookies: Bake for 12-14 minutes at 350 °F (180 °C), placing them on the center rack. Once done, remove from the oven and let the cookies cool on the sheet for 30 minutes without touching them.
âïž Cool and firm up: Transfer the cookies to a cooling rack and refrigerate to let them firm up even more.
