Chicken thigh meat (skinless)200 grams
Chicken liver50 grams
Few cloves of Garlic
3 tbsp Chicken stock
Handful of palm sugar
Pinch of Salt
2 tsp ground chili
3 tbsp lemon/lime juice
1 tbsp fish sauce
6 Heads minced shallots
3 tbsp chopped mint
3 tbsp coriander
2 tsp toasted rice powder
For serving :
Scallions (chopped)2 tablespoons
Roasted rice 1 tablespoon
cabbage For serving
Small fried chili peppers For serving
cucumber For serving
Green beans For serving

1. Mince the chicken thigh and liver with garlic. If you don't have rice powder, toast jasmine rice first in dry pan and then grind in krok. Bring the stock to a boil, season with sugar and salt. Sauté the minced chicken for about 2-3 minutes max, it will carry over heat cooking. Be careful not to overcook or the chicken will be tough. Remove from heat.
2. Season with lime juice, fish sauce and chili powder. Mix well. Then add sliced shallots and other herbs. mix again.
3. Serve with cabbage, cucumber and green beans. Top with roasted rice and garnish with fried chili.
