    Chocolate Brownie Lava Cookies

    For the cookies:

    1 cup unsalted butter, melted

    1 cup granulated sugar

    1 cup packed brown sugar

    2 large eggs

    1 tsp vanilla extract

    2 cups all-purpose flour

    ½ cup cocoa powder

    1 tsp baking soda

    ½ tsp salt

    For the Lava Center:

    8 oz semi-sweet chocolate, chopped

    2 tbsp heavy cream

    Prepare the Lava Filling:

    Melt the chopped semi-sweet chocolate and heavy cream in a microwave-safe bowl using 30-second intervals. Stir until smooth.

    Refrigerate the mixture for 15-20 minutes until slightly firm. Scoop into 1-inch balls and freeze for at least 1 hour.

    Make the Dough:

    In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar.

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Dry Ingredients:

    In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

    Gradually incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms.

    Chill the dough for 30 minutes.

    Assemble the Cookies:

    Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    Scoop 2 tablespoons of dough, flatten it, and wrap it around a frozen lava filling ball. Ensure the edges are sealed and shape into a ball.

    Bake the Cookies:

    Place the cookies 2 inches apart on the baking sheet.

    Bake for 12-14 minutes, until the edges are set but the centers remain soft.

    Allow the cookies to cool for 5 minutes on the tray before transferring them to a wire rack.
